How to make it

  • Heat oil in large saucepan. Add leeks, and gently sauté, off and on w pan covered. about 3 minutes
  • Add carrots, stir together, let steam w cover on and off. 4-5- minutes low heat.
  • Uncover pot and stir again. Add stock, nutmeg, ginger and spice zest, salt and pepper, Let come to boil, cover and simmer 30-40 minutes.
  • Now add orange juice. taste to adjust flavors ( I added the ginger/garlic paste) and enjoy.
  • Optional, put half of the soup in a blender and mix w other half.
  • I prefer rough soup! textury
