Slow Cooker Lentil Chili

- 1 16oz bag of lentils (any kind), picked through & rinsed shopping list
- 1 medium onion, diced shopping list
- 3 cloves garlic, minced shopping list
- 1 jalapeno, diced, seeds removed (I substituted sazon liquid seasoning, about 1/4-1/2 cup, plus a tsp or so of cayenne) shopping list
- 1 red pepper, chopped (optional) shopping list
- 1 large carrot, peeled and diced shopping list
- 2 1/2 cups vegetable broth shopping list
- 2 15oz cans tomato sauce shopping list
- 2 15oz cans diced tomatoes (I substituted V8 since my girls both hate chunks of tomato!) shopping list
- 1 15oz can black or red beans, rinsed and drained shopping list
- 3 T chili powder shopping list
- 1 T cumin shopping list
How to make it
- Place all ingredients in a large slow cooker.
- Stir well to combine
- Cook on low for 6 hours or high for 4 hours
- Check on progress -- you might have to add more broth if it seems too thick.
- Serve warm, topped with cheese, sour cream, avocados, etc.
