Fresh Pasta Dough

- 2 1/2 cups Italian-style "00" or unbleached flour shopping list
- 1 teaspoon fine sea salt shopping list
- 4 large eggs (crack into separate bowl) shopping list
- 1 Tablespoon extra virgin olive oil shopping list
- Semolina flour (for dusting pasta and working surfaces shopping list
How to make it
Making the dough
- Place flour salt in large mixing bowl (stand up mixer) with the hook attachment. pour eggs and oil into bowl. Mix at low speed and gradually increase to mix all ingredients to form together. Remove from bowl and separate into four separate balls. Wrap in plastic wrap and allow to sit at room temperature for 20-60 minutes.
Roll and Cut Dough
- With flat attachment on Kitchen Aid, set at 1. Flour working surface with Semolina flour and hands. Unwrap a ball and roll on the floured working space. Use a pasta scraper (or knife) to divide the balls into thirds. Keeping all working areas well floured. Roll out section to oval shape to about a 1/4 inch thickness.
- Feed oval section through Kitchen Aid Pasta maker at 1 at low speed and continue to "pass" through the machine, increasing speed and number on attachment until you are at level 5-7 depending on what you are making. 5 for fehttuchini and 7 for ravioli or tortellini.
Cooking Pasta
- Depending on thickness of pasta, cook between 7-9 minutes.
Notes
- Pasta dough can be made up to 24 hours in advance. Do not run water through the pasta attachments, simply wipe with clean towel. Enjoy!
