How to make it

  • Weigh the warm water and the flour in to your bread maker.
  • Sprinkle the salt and the yeast on top.
  • Set the bread maker for “dough”, which takes about an hour and a half on my machine.
  • Preheat the oven to 425 degrees.
  • Pour the dough out on to a parchment covered cookie tray and shape it in to a rough circle. The centre should be about an inch and a half to two inches thick, tapering to the edges.
  • Score the entire top in to squares, right through the dough with an oiled knife. Any cooking oil will do.
  • Whip together the egg with a pinch of cumin and the sugar.
  • Brush the top with the egg mixture.
  • Bake for 25 minutes.

    I have my most consistent success when I weigh the ingredients. It could be the dry area here on the prairies gives me drier flour. Weighing the flour solves this problem. I made this bread for March 1st World Day of Prayer 2019, honouring Slovenia.
