My family loves this enchilada recipe -- and it's so easy too!

Ingredients
  • 3 C Chicken (cooked)
  • 1/2 C picante sauce
  • 1/4 C Chopped green chiles
  • 1 Can cream of chicken soup
  • 1 C Light Sour Cream
  • Flour tortillas
  • 1 pkg shredded cheddar cheese
  • Red enchilada sauce

Directions
  1. Mix 1st 5 ingredients in bowl
  2. Grease 9 x 13 baking dish.
  3. Put 1/3- 1/2 can of enchilada sauce on bottom
  4. One layer of tortillas, then 1/2 of the chicken mixture. Repeat. Then add one layer of tortillas to the top.
  5. Pour more enchilada sauce, then package of cheese (3 cups at least)
  6. Bake on 350 for 25 minutes covered, then uncover for another 30 minutes.
