How to make it

  • Preheat oven to 350 degrees.
  • Saute onion, celery, carrots, and garlic in a non-stick pan till half cooked.
  • Mix all ingredients together.
  • Place in loaf pan and bake 30-35 minutes.
  • Let cool and remove from pan.
  • Coat meatloaf with a thin layer of ketchup and bake @ 425 degrees for 5 minutes.

  • I use a mix of ground beef, pork, and veal (meatloaf mix).
  • I mince the onion, celery, carrots and 2 cloves of garlic in a food processor.
  • I add some fresh chop parsley.
  • I cut the ketchup down to 1/2 cup.
  • I do not use Worcestershire or Tobasco sauces.
  • I find I need to cook the meatloaf longer, about 45+ minutes to reach an appropriate/safe internal temperature of 160 degrees. I do not pull it and let it cool to glaze, I simply glaze about 20 minutes before it’s done while it's still in the pan or not at all.
