Four Seasons Hotel Meatloaf

- 1 small onion - finely diced shopping list
- 3 stalks celery - finely diced shopping list
- 2 carrots - finely diced shopping list
- 2 tablespoons of minced garlic shopping list
- 2 pounds of ground beef shopping list
- 6 eggs shopping list
- 1 cup oats shopping list
- 1 cup ketchup shopping list
- salt and pepper to taste shopping list
- Worcestershire sauce and/or Tobasco sauce to taste (optional) shopping list
- extra ketchup for basting shopping list
How to make it
- Preheat oven to 350 degrees.
- Saute onion, celery, carrots, and garlic in a non-stick pan till half cooked.
- Mix all ingredients together.
- Place in loaf pan and bake 30-35 minutes.
- Let cool and remove from pan.
- Coat meatloaf with a thin layer of ketchup and bake @ 425 degrees for 5 minutes.
- MY NOTES ****
- I use a mix of ground beef, pork, and veal (meatloaf mix).
- I mince the onion, celery, carrots and 2 cloves of garlic in a food processor.
- I add some fresh chop parsley.
- I cut the ketchup down to 1/2 cup.
- I do not use Worcestershire or Tobasco sauces.
- I find I need to cook the meatloaf longer, about 45+ minutes to reach an appropriate/safe internal temperature of 160 degrees. I do not pull it and let it cool to glaze, I simply glaze about 20 minutes before it’s done while it's still in the pan or not at all.
