    A great meatloaf recipe! It's very moist and flavorful. I love the carrots and other vegetables in it. I followed the 'Notes' Linda posted and did as she, with mincing the veg in the food processor and not sauteing the veg first. But before I minced the veggies, I put the oats in the processor first and pulsed them for a few seconds, until most were broken up. I used large flake, old fashioned oats, so I just wanted to make sure they soaked up the moisture and were evenly distributed.
    Linda let me know ahead of time that the mixture is a little loose and said you can refrigerate it before baking to help it firm up. Since I wasn't using a loaf pan, I refrigerated it for about a 1/2 hour, then free-formed two loaves on a baking tray. It took about 35 minutes to cook. Then I glazed with the ketchup and cooked it at 425F for about 10 minutes instead of 20.
    The whole family loved it and went back for seconds! I made sure to hide some portions so I could have leftovers. My daughter and I just finished it off for lunch, and it tastes even better the next day! I really enjoyed it on toast.
    Since the mixture is so moist I could see using extra lean beef, or even ground turkey or chicken without fear of it drying out. Or perhaps add a few bread crumbs if you like a firmer meatloaf, but I really like it the way it is.
    I will definitely make it again! :)

    I swear I commented on this yesterday and it's not there! My daughter and I are huge meatloaf lovers but my husband and son, not so much. It is a very difficult job to satisfy everyone in this house with so many different likes and dislikes lol. This meatloaf looks amazing Shona! I like the light glazing on top, most have you put globs of topping on, which is good, but sometimes too much. Looks so moist!!

    Have you tried mini-meatloaves? When they're baked mini you get more surface area so the outside is more brown, and it seems to please those who don't like traditional meatloaf. This is my go-to recipe from Keni: Slavinkeni I use it as a guide now, usually I add ketchup or pasta sauce for the "spicy tomato sauce", regular or dijon mustard and sometimes skip the bacon. It tastes more like a burger than meatloaf (in taste and texture), it's like eating a burger with a fork or like a giant meatball! ;)
