How to make it

  • Preheat oven to 350F.
  • Bring a large pot of water to boil.
  • Add salt to taste.
  • While your water is coming to a boil, peel the potatoes.
  • Once the water is boiling, add baking soda, then add the potatoes and boil for 20 minutes.
  • Once the potatoes are cooked, drain the water, and give them a shake around the pot to roughen them up a bit. (Not too much or they'll break apart)
  • Once the potatoes are drained you can either set them aside with the lid on until you're ready to continue, or proceed ahead.
  • Pour the olive oil in to a baking pan. I used a small lasagna pan and it worked perfectly.
  • Place the pan in the oven to heat for 10 minutes.
  • Carefully add the potatoes to the now heated oil and turn well to coat completely.
  • Bake for 1 1/4 hours turning the potatoes every 15 minutes.
  • Add the rosemary and garlic cloves when you have about a half hour left of cooking time.
  • Discard rosemary and garlic.
  • Set potatoes on a serving platter and sprinkle with salt.
  • Serve immediately.
  • Enjoy!
