Crispy Roast Potatoes

- 8 large potatoes shopping list
- 1/3 cup olive oil shopping list
- 4 sprigs fresh rosemary shopping list
- 4 unpeeled garlic cloves, flattened slightly shopping list
- salt to taste shopping list
- 1/4 tsp. baking soda shopping list
How to make it
- Preheat oven to 350F.
- Bring a large pot of water to boil.
- Add salt to taste.
- While your water is coming to a boil, peel the potatoes.
- Once the water is boiling, add baking soda, then add the potatoes and boil for 20 minutes.
- Once the potatoes are cooked, drain the water, and give them a shake around the pot to roughen them up a bit. (Not too much or they'll break apart)
- Once the potatoes are drained you can either set them aside with the lid on until you're ready to continue, or proceed ahead.
- Pour the olive oil in to a baking pan. I used a small lasagna pan and it worked perfectly.
- Place the pan in the oven to heat for 10 minutes.
- Carefully add the potatoes to the now heated oil and turn well to coat completely.
- Bake for 1 1/4 hours turning the potatoes every 15 minutes.
- Add the rosemary and garlic cloves when you have about a half hour left of cooking time.
- Discard rosemary and garlic.
- Set potatoes on a serving platter and sprinkle with salt.
- Serve immediately.
- Enjoy!
