  • 3½ pounds beef roast, tip or cross rib
  • 1/3 pound beef bones
  • 4 quarts water
  • 2 Tablespoons salt
  • 6-8 medium carrots
  • 2-3 medium turnips
  • 2 large leeks
  • 1 bunch stalk celery
  • 1 large yellow onion
  • 2 cloves garlic, peeled
  • 1 bouquet garni*

Directions
  1. PREPARATION AND COOKING: (Total cooking time 3-4 hours) Peel and wash vegetables and cut into equal sizes. Using kitchen string, tie the leeks into a bunch. Tie celery into a bunch. Tie the meat with string so it won't come apart while cooking, if you do not purchase it already tied with netting. In a large stew kettle, cover the meat with cold water, and boil for 10 minutes. Then place the beef in a colander and wash with cold water. Wash the stew kettle, then put the beef back and cover with 4 quarts of unsalted water. *Add bouquet garni: parsley, thyme, bayleaf, tied together. Add bones. Bring to boil; cook uncovered for 2 hours. Add all vegetables and salt. Turn heat low; cook uncovered for 1 hour. After meat and vegetables are fully cooked, take them out of the kettle. (Save the broth for use later as a soup with the addition of noodles.)
  2. PRESENTATION: Remove all the strings. Slice the beef. Place on serving plate and surround with vegetables.
