Pumpkin Layer Cheesecake Recipe
This is the most creamy and easy pumpkin layer cheesecake!! I've tried restaurant versions of this and nothing comes close!!

Ingredients
  • CRUST:
  • * 1½ cups graham cracker crumbs
  • * 3 Tablespoons sugar
  • * 1/3 cup butter
  • CHEESECAKE:
  • * 16 ounces cream cheese (softed)
  • * ½ cup sugar
  • * ½ teaspoon vanilla extract
  • * ½ cup pumpkin with pumpkin pie spices to taste
  • * 2 eggs
  • CHIFFON:
  • * 8 ounces cream cheese, softened
  • * ½ cup pumpkin
  • * 1 cup powdered sugar
  • * 1 large tubs Cool Whip
  • TOPPING:
  • * 1 large tub of Cool Whip
  • * Pumpkin pie spice

Directions
  1. CRUST: Mix all ingredients together and press into the bottom of cheesecake pan.
  2. CHEESECAKE: Blend all together and pour into crust. Bake at 350° F for 40 minutes until set. Refrigerate till cold.
  3. CHIFFON: Blend cream cheese, pumpkin and powdered sugar well. Fold in Cool Whip and layer on top of chilled cheesecake. Chill again.
  4. TOPPING: Blend Cool Whip with pimpkin pie spice and spread on top of cake. Chill and serves
