  • ORANGE PASTRY:
  • 2 cups sifted all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup shortening
  • 5 to 7 Tablespoons orange juice
  • FILLING:
  • 3 cups 1-inch slices rhubarb
  • 1 cup sugar
  • ½ teaspoon grated orange peel
  • 3 Tablespoons flour
  • Dash salt

Directions
  1. PASTRY: Sift together flour and salt. Cut in shortening with pastry blender or blending fork till pieces are size of small peas. Sprinkle 1 Tablespoon of the orange juice over part of flour-shortening mixture. Gently toss with a fork; push to one side of the bowl. Sprinkle next Tablespoon of orange juice over dry part; mix lightly; push to moistened part at side. Repeat till all is moistened. Gather up with fingers; form into ball. (Divide into two balls.) On lightly floured surface, flatten ball slightly and roll 1/8-inch thick. Transfer to 9-inch pie plate.
  2. FILLING: Combine rhubarb, sugar, orange peel, flour and salt. Fill pie plate with mixture. Dot with butter.
  3. Add lattice crust; flute. Bake at 400° F for about 40 to 50 minutes.
