Sautéed Sweet Plantains With Warm Spiced Peach & Plum Compôte

- 1 slightly overripe yellow plantain, chopped into roughly ¾" coins, on an angle if you prefer shopping list
- 1 slightly overripe plum, and 2 hella overripe small peaches (or 1 large peach), roughly diced shopping list
- 1 tsp Vanilla extract shopping list
- 1 tsp ground cinnamon, ½ tsp cloves, nutmeg, and allspice (can just be subbed out for 1-1½ tsp pumpkin spice shopping list
- About 1 Tbsp of date syrup shopping list
- 1 Tbsp coconut oil for the pan shopping list
How to make it
- Turn on stovetop to medium heat, let coconut oil melt and get hot
- Put plantain coins in hot oil, let brown for about 3-4 mins. Flip, season with spices, add vanilla extract in drops over the plantains
- Give it a few mins to also brown before adding the fruit. Vitamin C is delicate so add the fruit at the last possible moment to retain as much of the nutrition as possible. It only needs to be warm.
- Add additional spices if desired. You can add the date syrup here too, or add it on the plate for decoration. You can do both if your sweet tooth is raging especially bad.
- Flip the fruit around to blend, heat for about a minute more and remove to a plate. That's pretty much it. Enjoy!
