Authentic Boston Baked Beans

- 1/2 pound navy beans shopping list
- 2 T white sugar shopping list
- 1/4 lb salt pork cut into bite sized pieces (3/4” squares sliced to 1/4” thick) shopping list
- 3 T molasses shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1/2 onion, uncut shopping list
- 1/2 tsp mustard powder shopping list
How to make it
- Soak beans overnight
- Boil them in the morning with the baking soda for 10 minutes
- Strain and rinse with cold water
- Preheat oven to 325
- In your bean pot, layer half of the salt pork and place the onion half on top
- Pour in the beans and top with the remaining salt pork
Add the sauce
- Sauce: all the remaining ingredients with 1 1/2 cups of hot water
- Cover and cook at 325 for 6 hours, checking periodically to ensure the water still tops the beans (about 1/4" above beans). Add hot water as necessary, but don’t “drown” the beans…just top them off. They’re usually fine for the first 2 hours; after that usually about half a cup of water an hour.
