How to make it

  • Soak beans overnight
  • Boil them in the morning with the baking soda for 10 minutes
  • Strain and rinse with cold water
  • Preheat oven to 325
  • In your bean pot, layer half of the salt pork and place the onion half on top
  • Pour in the beans and top with the remaining salt pork
  • Add the sauce

  • Sauce: all the remaining ingredients with 1 1/2 cups of hot water
  • Cover and cook at 325 for 6 hours, checking periodically to ensure the water still tops the beans (about 1/4" above beans). Add hot water as necessary, but don’t “drown” the beans…just top them off. They’re usually fine for the first 2 hours; after that usually about half a cup of water an hour.
