A great side dish to serve with chicken or pork.

Ingredients
  • 2 c. dried apricots, chopped
  • 1 c. white raisens
  • 2 c. rice
  • 1/2 c. butter
  • 1 c. minced onions
  • 1/2 c. green bell pepper
  • 1/2 tsp or to taste curry powder
  • 1 c. toasted slivered almonds

Directions
  1. Cover and soak to plump apricots and raisens for 1/2 hour.
  2. Cook rice according to package directions.
  3. Preheat oven to 375 degrees.
  4. Melt butter in a skillet; saute onion and pepper, add curry powder towards end. Mix in toasted almonds, apricots, raisens and cooked rice. Put into a greased baking dish to bake at 375 degrees for about 30 minutes.
