Barbs Rice Pudding Recipe
My Aunt Barb’s rice pudding is very good and easy. It is on the sweet indulgence side. It is thick and creamy and different ingredients than most rice puddings.

Ingredients
  • This makes a large amount. Half the recipe for less.
  • 1 pound “Carolina” rice
  • 1 stick butter, sweet
  • 1 can evaporated milk
  • 1 quart milk
  • 1 cup sugar or add more or less to taste
  • 1 large package of jello instant pudding
  • Vanilla to taste
  • Raisins (optional, I soak mine to plump them up then drain them)

Directions
  1. Boil rice in directed amount of water until almost tender.
  2. Can leave some water in the pot.
  3. Turn to simmer.
  4. Then add butter, can milk, milk, sugar and simmer 2 hours.
  5. Remove from heat.
  6. Stir in dry pudding mix add vanilla.
  7. Raisin should get add in the last 15 minutes of cooking if you are adding them.
  8. Sprinkle with cinnamon.
