Ingredients

2 c RAW CONCH MEAT DICE SMALL

1/2 c CELERY

1/2 c ONION (VIDALIA)

1 GREEN PEPPER

1 c CUCUMBER

1-1/3 c FRESH TOMATOES

*TOMATO SAUCE

2/3 c LIME JUICE

*2 ds HOT PEPPER

*SALT

* TO TASTE.

Directions

DICE THE PEPPER, VEGETABLES AND PEEL AND DICE THE CUCUMBER. COMBINE ALL INGREDIENTS AND MIX THOROUGHLY. THE SMALLER THE DICE THE BETTER THE SALAD.

I LIKE TO ADD TOMATO SAUCE TO MAKE IT THICKER AND GIVE IT SOME BODY. ADD MORE LIME JUICE FOR A HOTTER SALAD.

When I was in the Bahamas, the natives would pull the conch out of the water and then out of the shell right in front of us on the beach. Then they would make the most amazing conch salad pretty much like yours.. It was the freshest, most wonderful thing!
