Rotini Chili Recipe
This is chili-pasta that makes a big batch for a casual get together. It's super easy and really filling.

Ingredients
  • 6-8 slices bacon, finely chopped
  • 2 pounds lean ground beef
  • 2 medium onions, chopped
  • 1 medium green bell pepper, chopped
  • 1/2 cup chopped celery
  • 2-3 garlic cloves, minced
  • 2-28 ounce cans and 1 -16 ounce can whole tomatoes, undrained but chopped
  • 1-15 ounce can kidney beans, undrained
  • 1-15 ounce can pinto beans, drained
  • 2-3 tablespoons chili powder
  • 2 teaspoons beef bouillon
  • 1 teaspoon ground cumin
  • 1/2 teaspoon crushed red pepper flakes
  • 1-16 ounce package rotini
  • 1 16 ounce package shredded sharp cheddar cheese, for garnish
  • Sour cream, for garnish
  • chopped scallions for garnish
  • Corn chips for garnish

Directions
  1. In a large kettle, dutch oven, cook bacon until crisp.
  2. Add ground beef, onion, peppers, celery and garlic.
  3. Cook until beef is browned; drain.
  4. Add tomatoes, kidney beans, pinto beans, chili powder, beef bouillon, cumin, red pepper flakes and salt (if desired).
  5. Simmer covered 1 hour.
  6. Cook rotini according to package directions, drain.
  7. When chili is done, stir in drained rotini and heat through.
  8. Serve with sour cream, scallions, shredded cheddar cheese and corn chips.

Trying this tonight! Have too. Love chili and my curiousity is peaked. What, no sharp cheddar cheese to sprinkle on top with the sour cream and corn chips for garnish??? Boy, we need to talk. :D


Alright. . . I tried it and guess what? Loved it! Yep! I can not believe just how much this recipe makes. It is funny though. I'm in the kitchen cooking several things at once and I had just gotten home from the grocery store an hour earlier with a few cans of stuff out on the counter still. The recipe calls for the kidney and pinto beans and I accidently open two cans of kidney beans and a can of pinto beans. The pot was so full, I think I had a sixteenth of an inch before the pot overflowed. Teach me to pay attention. Your the best and thank you for an awesome recipe Jaie! :D
