Turkey And Bean Paprikash Recipe
This was inspired by a Rachel Ray recipe. I added more flavors and textures to make it work for me.

Ingredients
  • 1 lb. ground turkey (I found that the lean dark meat works best.)
  • 1/2 bag of No Yolk Egg Noodles
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 1 lb. mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 can black beans, drained
  • 1 can whole tomatoes, chopped
  • 1/2 tsp. black pepper
  • 1/2 tsp. red pepper flakes
  • 1 tsp. ground cumin
  • 1 1/2 Tbs. Paprika

Directions
  1. Cook noodles according to package.
  2. Brown meat in a large skillet.
  3. Add bell pepper, onion, garlic and mushrooms and cook until softened.
  4. Stir in spices.
  5. Add beans and tomatoes.
  6. Bring to a boil.
  7. Reduce heat and simmer for 5 minutes.
  8. Stir in cooked noodles.
  9. Note: If you would like for there to be a bit more sauce to this, add 1 C. chicken stock when you add the tomatoes and increase the simmer time to 15 minutes.
