Cayenne Calamari With Aioli Recipe
Calamari with a bit of bite and a delightful dipping sauce. Recipe is easily multiplied for a larger group.

Ingredients
  • Aioli:
  • 1/2 cup olive oil
  • 2 large whole cloves garlic
  • Juice and zest of one lemon
  • 1 tsp Dijon mustard
  • Pinch cayenne pepper
  • 1 egg yolk
  • Salt and pepper to taste
  • Calamari:
  • 2 cups canola oil
  • 1/2 cup flour
  • 1 Tbsp cornstarch
  • 1 tsp paprika
  • 1/2 tsp dry mustard
  • 1/2 tsp cayenne
  • 20 small squid rings
  • Sea salt to taste

Directions
  1. First, prepare aioli: In a small saucepan, heat oil over medium-low heat. Add whole garlic cloves and simmer until golden brown and soft; remove cloves and reserve. Let oil cool to room temperature.
  2. Mash garlic cloves and mix with lemon juice, mustard, cayenne and egg yolk. Whisk thoroughly and, very slowly, drizzle in olive oil until thickened to a mayonnaise-like consistency. Stir in lemon zest and add salt and pepper to taste; refrigerate until serving time.
  3. For calamari: Heat oil in a small saucepan. Combine flour, cornstarch and spices. Toss squid in flour mixture. Deep fry in oil for about 45 seconds or until crisp and golden. Drain on paper towels and sprinkle with salt.
  4. Serve immediately with aioli.
