San Antonio Ceviche

- 2 cups fresh scallops cut into bite sized pieces shopping list
- 1/2 cup green onion chopped shopping list
- 3 small serrano peppers finely chopped shopping list
- 1/3 cup fresh lime juice shopping list
- 1/2 cup tomato juice shopping list
- 1/3 cup olive oil shopping list
- 2 tomatoes chopped shopping list
- 1-1/2 cloves garlic minced shopping list
- 1/2 teaspoon thyme shopping list
- 1 tablespoon fresh parsley chopped shopping list
- 1 tablespoon fresh cilantro chopped shopping list
- 1/4 cup sweet red pepper chopped shopping list
- salt and pepper to taste shopping list
How to make it
- Combine ingredients in order given.
- Mix well.
- Always use ceramic container for marinating this mixture.
- Marinate for 24 hours.
- Drain a little and serve with tostados or melba toast.
