Ingredients
  • 2 cups fresh scallops cut into bite sized pieces
  • 1/2 cup green onion chopped
  • 3 small Serrano peppers finely chopped
  • 1/3 cup fresh lime juice
  • 1/2 cup tomato juice
  • 1/3 cup olive oil
  • 2 tomatoes chopped
  • 1-1/2 cloves garlic minced
  • 1/2 teaspoon thyme
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon fresh cilantro chopped
  • 1/4 cup sweet red pepper chopped
  • Salt and pepper to taste

Directions
  1. Combine ingredients in order given.
  2. Mix well.
  3. Always use ceramic container for marinating this mixture.
  4. Marinate for 24 hours.
  5. Drain a little and serve with tostados or melba toast.
