How to make it

  • Stir together oil, eggs, sugar, vanilla and green tomatoes. Sift together remaining ingredients. Add dry ingredients (including nuts and raisins, to taste) to wet mixture, and then pour batter into two loaf pans, lined with wax paper. Bake in 325° F oven for one hour or longer. For variation use only 1 1/2 cups tomato and add 1/2 cup apples or 1/2 cup crushed pineapple. Freezes very well.

    never have had or even heard of tomato bread---I have many green ones right now so I will have to try it
