An incredibly simple, rich, delicious chocolate cake that's super-fast to prepare.

  • 1 1/2 cups (150 g) sifted flour
  • 1 cup (200 g) sugar
  • 3 Tbsp (50 ml) baking cocoa
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (2.5 ml) salt
  • 1 egg
  • 1/4 cup (60 g) butter, melted
  • 1 cup (250 ml) sour milk (see note below in Directions, Tip #1)
  • 1/4 cup (60 ml) hot strong coffee (or hot water)
  • 1 Tbsp (15 ml) vanilla

Directions
  1. Preheat oven to 350F or 175C Sift together flour, sugar, cocoa, baking soda and salt into mixing bowl.
  2. Add egg, butter, sour milk, hot water and vanilla.
  3. Beat (preferably with an electric mixer) at medium speed for 2 minutes.
  4. Pour batter into a greased 13 x 9 x 2-inch (33 x 22 x 5-cm) baking pan.
  5. Bake at 350F or 175C for 20 minutes or until it tests done (a toothpick or fork comes out clean). Cool in pan.
  6. Tip #1: To sour sweet milk, place 1 Tbsp (15 ml) vinegar in a measuring cup and add enough milk to make 1 cup (250 ml)
  7. Tip #2: I usually double this recipe. It works just fine doubled, but bear in mind that the baking time is roughly doubled when the recipe is doubled.

I don't know who Aunt Georgie was. I do know that I sometimes find that the super-fresh milk I like to buy at farmer's markets goes sour faster than I can use it. I found this recipe through trusty google one day in Budapest and was delighted by the rich, delicious results. My own addition is to use hot strong (leftover) coffee in place of the hot water for a hint of mocha flavor. If you don't have sour milk, or it turns your stomach to think of using it, you can turn sweet milk sour with the method described.

The posted recipe I found came with the following introduction:
"Don't cry over sour milk; make a chocolate cake out of it. This cake is from the "Farm Journal's Choice Chocolate Recipes" cookbook, and was originally posted to net.cooks by kathyd@azure. It is moist and rich and does not need frosting Mint chocolate ice cream and a slab of this cake makes an outrageous dessert."
