Veggie Au Gratin Recipe
This is a great way to use items from the garden, or from your local market stand in Aug. Makes a great side dish or main dish for vegatarians.

Ingredients
  • 3 -4 med. potatoes sliced thin
  • 1 small zucchini sliced thin or about a cup
  • 2-3 roma tomatoes sliced or chopped
  • 1 diced jalopeno pepper
  • 1 t dried dill
  • 1/4 cup fresh parm cheese
  • 1/4 cup Italian cheese blend

Directions
  1. lightly oil a baking pan, that you mic and bake in
  2. (glass, or corning, NOT metal)
  3. slice potatoes and lay them down, salt and pepper and sprikle with dill.
  4. Sprinkle with 2 T water, Cover with plastic wrap and mic for 5 min.
  5. remove cover add zuchinni layer cover again and mic for 3 min.
  6. remove plastic and sprinkle with chopped jalopeno & parm cheese
  7. bake for 15 min
  8. then add tomatoes and Italian cheese and bake another 3-5 min
  9. until cheese is melted or bubbles

I love the micro ides in the recipe takes so much of the time out of the au gratin!! I think i'm going to try this with my scalloped taters and see how they fair!! Thanks for the idea!

Very simple and nice,, i added a bit of panko with the cheese to make a bit of a crust over the gratin. thanks for the recipe:)
