How to make it

  • To make olive oil mayonnise:
  • In a bowl, whisk together mayonnaise, extra virgin olive oil, garlic and pepper.Whisk until smooth. Refrigerate 15-30 minutes.
  • In a skillet, cook bacon until crisp. Remove and drain on paper towel.
  • Toast bread to liking.
  • Spread olive oil mayonnaise on toasted bread.
  • Layer bacon, mixed greens, and tomato slices.
  • Add cheese if desired.
  • Top with other half of bread.
  • Cut in half and serve.
