Hot Antipasto Open-faced Sandwich Recipe
It's amazing what you can come up with when you're sitting in an Italian restaurant looking at someone else's plate of antipasto!!!

Ingredients
  • 1/4 cup creamy Italian dressing
  • 2 tablespoons grated parmesan cheese
  • 1 cup cherry tomatoes, cut into fourths
  • 1-14 ounce can artichoke hearts, drained and cut into fourths
  • 1 package sliced pepperoni, cut up
  • 1 can sliced ripe black olives, drained
  • 2 "poor boy" buns or Portuguese rolls
  • 1/2 cup shredded mozzarella cheese

Directions
  1. In a bowl, mix dressing and parmesan cheese.
  2. Add tomatoes, artichoke hearts, pepperoni and olives. Toss to mix well.
  3. Turn oven to broil.
  4. Place bun, cut sides up, on cookie sheet.
  5. Broil with tops about 6 inches from heat for about 5 minutes, or until golden brown. (don't over toast)
  6. Spoon pepperoni mixture onto buns.
  7. Sprinkle each with mozzarella cheese.
  8. Broil another 3-4 minutes unitl cheese is hot and bubbly.
  9. Makes 4 open-faced sandwiches.
