How to make it

  • Crumble sausage in a large sauce pan and cook until done. Drain and set aside.
  • Using the same pan, heat oil. Saute onion over medium heat, until just soft. Add livers and garlic and cook, stirring constantly, until brown (about 3 to 4 minutes).
  • Add rice and stir well. Add broth, salt, pepper and cayenne pepper. Bring to a boil, then reduce heat to simmer. Cover and cook about 20 minutes, until rice is done.
