Creamy peanutty chicken pitas

- Sandwich part: shopping list
- 2 boneless, skinless chicken breast halves shopping list
- 2 pita bread pockets, 6-inch, halved shopping list
- 2 cups pre-mixed coleslaw blend shopping list
- 1/2 cup diced cucumber shopping list
- Sauce: shopping list
- 1/4 cup cream peanut butter shopping list
- 1 teaspoon sugar shopping list
- 1/4 teaspoon garlic salt shopping list
- 1/8 teaspoon ginger, optional shopping list
- 3 tablespoons water shopping list
- 2 teaspoons soy sauce shopping list
- 1 teaspoon cider vinegar shopping list
- 1/2-1 teaspoon Frank's® hot sauce shopping list
How to make it
- In a bowl, whisk together all the sauce ingredients. Mix well. Add salt and pepper to taste if desired.
- Reserve 2 tablespoons of the sauce for the chicken.
- In another bowl, combine coleslaw blend and cucumber.
- Add remaining sauce to coleslaw mixture and toss to mix.
- Cover and refrigerate until ready to use. Mix again before using.
- Gently pound the chicken breasts between 2 pieces of plastic wrap until they are about 1/4-inch thick.
- Turn oven to broil.
- Cut chicken breasts in half crosswise.
- Place chicken on a broiler pan.
- Broil 4-6 inches from the heat for 5-7 minutes.
- Turn chicken over and spread the 2 tablespoons of reserved sauce over the chicken.
- Broil another 3 minutes or until chicken is fork-tender and no longer pink.
- To serve, place chicken in pita bread halves and add coleslaw mixture.
