How to make it

  • In a bowl, whisk together all the sauce ingredients. Mix well. Add salt and pepper to taste if desired.
  • Reserve 2 tablespoons of the sauce for the chicken.
  • In another bowl, combine coleslaw blend and cucumber.
  • Add remaining sauce to coleslaw mixture and toss to mix.
  • Cover and refrigerate until ready to use. Mix again before using.
  • Gently pound the chicken breasts between 2 pieces of plastic wrap until they are about 1/4-inch thick.
  • Turn oven to broil.
  • Cut chicken breasts in half crosswise.
  • Place chicken on a broiler pan.
  • Broil 4-6 inches from the heat for 5-7 minutes.
  • Turn chicken over and spread the 2 tablespoons of reserved sauce over the chicken.
  • Broil another 3 minutes or until chicken is fork-tender and no longer pink.
  • To serve, place chicken in pita bread halves and add coleslaw mixture.
