Creamy Peanutty Chicken Pitas Recipe
Peanut sauce and chicken make this sandwich delicious. It is easy to make and the sauce can be made the night before if desired.

Ingredients
  • Sandwich part:
  • 2 boneless, skinless chicken breast halves
  • 2 pita bread pockets, 6-inch, halved
  • 2 cups pre-mixed coleslaw blend
  • 1/2 cup diced cucumber
  • Sauce:
  • 1/4 cup cream peanut butter
  • 1 teaspoon sugar
  • 1/4 teaspoon garlic salt
  • 1/8 teaspoon ginger, optional
  • 3 tablespoons water
  • 2 teaspoons soy sauce
  • 1 teaspoon cider vinegar
  • 1/2-1 teaspoon Frank's® Hot sauce

Directions
  1. In a bowl, whisk together all the sauce ingredients. Mix well. Add salt and pepper to taste if desired.
  2. Reserve 2 tablespoons of the sauce for the chicken.
  3. In another bowl, combine coleslaw blend and cucumber.
  4. Add remaining sauce to coleslaw mixture and toss to mix.
  5. Cover and refrigerate until ready to use. Mix again before using.
  6. Gently pound the chicken breasts between 2 pieces of plastic wrap until they are about 1/4-inch thick.
  7. Turn oven to broil.
  8. Cut chicken breasts in half crosswise.
  9. Place chicken on a broiler pan.
  10. Broil 4-6 inches from the heat for 5-7 minutes.
  11. Turn chicken over and spread the 2 tablespoons of reserved sauce over the chicken.
  12. Broil another 3 minutes or until chicken is fork-tender and no longer pink.
  13. To serve, place chicken in pita bread halves and add coleslaw mixture.
