Ingredients
  • Baking size potatoes, washed, skin on.
  • 1 cooked, diced chicken breast (seasoned as you prefer)
  • Turkey bacon (4 slices per spud, 2 slices on each half)
  • Finely shredded cheese, your favorite (I use cheddar)
  • Your favorite condiments, i.e veggies, salsa, sour cream, herbs, spices, etc.

Directions
  1. Bake the spuds until they are done.
  2. Allow to cool enough to handle, so you can cut the spuds in half and scoop out the potato flesh. Meanwhile, put the turkey bacon in the over to cook (suggested temp of 350, monitored).
  3. Once hollowed, line the skins with 2 slices of the cooked turkey bacon.
  4. Fill with some of the chicken.
  5. Sprinkle with the shredded cheese (add any spices, herbs, or veggies you want cooked).
  6. Bake at 350 for about 20 - 30 minutes.
  7. Serve as is or topped with your favorite condiments.

I have done something similar before with just bacon and cheese, but this soulds great. thanks for sharing

Alterations


I made this for supper tonight, and decided to try spicing the chicken with a bit of cumin, paprika, and garlic powder. Also, I "pan fried" the chicken in VOO. I thought it was delicious, but the mildness of the turkey bacon was very noticeable. Maybe seasoning the bacon prior to cooking it might help. With another alteration or two in this manner, this would be a fantastic and rather healthy southwestern or tex/mex meal, particularly topping with salsa, sour cream, and maybe a different cheese i.e. monterey, or event a cheese blend.
