SANTA FE CHICKEN

- 1 large onion, chopped shopping list
- 1 tablespoon butter shopping list
- 1 ¼ cups chicken broth shopping list
- 1 cup salsa (hot or mild your choice) shopping list
- 1 cup uncooked rice shopping list
- 1/8 teaspoon garlic powder shopping list
- 4 boneless chicken breasts shopping list
- ¾ cup shredded cheddar cheese shopping list
How to make it
- Sauté onion in butter. Add broth and salsa bring to a boil. Stir in rice and garlic. Place chicken over rice, cover and simmer for 10 minutes. Turn chicken and cook for 10 to 15 minutes more.
- Remove from heat and sprinkle with cheese, cover and let stand 5 minutes to melt cheese.
- I flatten the chicken breast then cut in half also I sometimes drain a can of black beans and add to the pot.
