How to make it

  • Sauté onion in butter. Add broth and salsa bring to a boil. Stir in rice and garlic. Place chicken over rice, cover and simmer for 10 minutes. Turn chicken and cook for 10 to 15 minutes more.
  • Remove from heat and sprinkle with cheese, cover and let stand 5 minutes to melt cheese.
  • I flatten the chicken breast then cut in half also I sometimes drain a can of black beans and add to the pot.
