How to make it

  • Have head of salmon removed; clean the fish well. Spread inside with mustard, season with salt and pepper. Lay slices of onion in the fish. Place in a greased baking dish. Cover with bacon slices and bake, uncovered, in a 350ยบ oven for 45 minutes, or until the fish flakes easily when tested with a fork.
