How to make it

  • Cook rotini according to package directions, adding broccoli during the last minute of cook time.
  • Drain and set aside.
  • In a bowl, whisk together vinegar, salt, pepper and red pepper flakes.
  • Continue whisking and slowly add the olive oil.
  • Pour dressing over pasta and broccoli and toss.
  • Add carrots, 1/2 cup basil, 1/2 cup red bell pepper, olives, parmesan cheese, green onions and cherry tomato halves.
  • Toss to mix well.
  • Garnish with remaining basil and red bell pepper.
  • If time permits,refrigerate for 30 minutes prior to serving and toss again.
