Party perfect pasta salad

- 1-12 ounce box tri-color rotini shopping list
- 2 cups broccoli florets shopping list
- 1/4 cup balsamic vinegar shopping list
- salt and pepper to taste shopping list
- 1/8 teaspoon red pepper flakes, optional shopping list
- 3/4 cup extra virgin olive oil shopping list
- 1 cup carrots, peeled and shredded shopping list
- 3/4 cup fresh basil, divided and chopped shopping list
- 3/4 cup red bell pepper, finely chopped and divided shopping list
- 1 cup sliced olives, black or kalamata shopping list
- 1 cup fresh parmesan, grated shopping list
- 1/2 cup green onions, sliced shopping list
- cherry tomatoes, halved shopping list
How to make it
- Cook rotini according to package directions, adding broccoli during the last minute of cook time.
- Drain and set aside.
- In a bowl, whisk together vinegar, salt, pepper and red pepper flakes.
- Continue whisking and slowly add the olive oil.
- Pour dressing over pasta and broccoli and toss.
- Add carrots, 1/2 cup basil, 1/2 cup red bell pepper, olives, parmesan cheese, green onions and cherry tomato halves.
- Toss to mix well.
- Garnish with remaining basil and red bell pepper.
- If time permits,refrigerate for 30 minutes prior to serving and toss again.
