Gluten-Free Corn Bread Recipe
This tastes just like regular corn bread.. I tinkered with my old recipe until I came up with this one. The trick is the addition of the Corn Flour. Hope you enjoy.

Ingredients
  • 3/4 cup Wendy Wark's gluten-free flour mix (recipe is on my page)
  • 1/4 cup corn flour - ( NOT Corn Starch)
  • 1 cup corn meal
  • 1/3 cup sugar
  • 2 1/2 Tablespoons baking powder
  • 3/4 Teaspoon salt
  • 1/4 teaspoon Xanthan
  • 1/4 cup butter
  • 2 extra large eggs
  • 1 cup milk

Directions
  1. in a large bowl mix all the dry ingredients together
  2. cut in the butter..( like you're making pie crust)
  3. mix in the eggs and milk. don't over mix. because of the amount of baking powder it will be very bubbly
  4. pour into a greased 8 x 8 baking pan
  5. bake for approx. 20 mins in a 375' oven
