Gluten-Free Corn Bread

- 3/4 cup Wendy Wark's gluten-free flour mix (recipe is on my page) shopping list
- 1/4 cup corn flour - ( NOT corn Starch) shopping list
- 1 cup corn meal shopping list
- 1/3 cup sugar shopping list
- 2 1/2 Tablespoons baking powder shopping list
- 3/4 Teaspoon salt shopping list
- 1/4 teaspoon Xanthan shopping list
- 1/4 cup butter shopping list
- 2 extra large eggs shopping list
- 1 cup milk shopping list
How to make it
- in a large bowl mix all the dry ingredients together
- cut in the butter..( like you're making pie crust)
- mix in the eggs and milk. don't over mix. because of the amount of baking powder it will be very bubbly
- pour into a greased 8 x 8 baking pan
- bake for approx. 20 mins in a 375' oven
