Potato And Spinach Casserole Recipe
This is so tasty and never lasts long when I serve it. Eveyrone loves this. Hope you do too.

Ingredients
  • 8 large potatoes peeled cooked and mashed
  • 8 ounces sour cream
  • 2 teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons chopped chives
  • 1/4 cup butter
  • 10 ounce package frozen chopped spinach thawed and well drained by squeezing
  • 1 cup shredded cheddar cheese

Directions
  1. In large bowl combine all ingredients except cheddar cheese.
  2. Spoon into a greased two quart casserole.
  3. Bake uncovered at 400 for 15 minutes then top with cheese and bake 5 minutes longer.
