Country Style Smothered Chicken

- 2 slices bacon shopping list
- 2 1/2 to 3 pound broiler-fryer chicken, cut up shopping list
- 1 can (10 3/4 oz.) condensed cream of mushroom soup shopping list
- 1 garlic clove, minced shopping list
- 1 teaspoon dried basil leaves, crushed shopping list
- 1 medium onion, sliced shopping list
- Hot cooked rice shopping list
How to make it
- 1. In 10 inch skillet over med. heat cook bacon until crisp, Transfer to paper towels to drain, reserving dripping in pan. Crumble bacon set aside.
- 2. Over med. heat, in hot drippings, cook chicken 10 mins. or until browned on all sides. spoon off fat.
- 3. Add soup, garlic, and basil; stir until smooth. Heat to boiling. Reduse heat to low. cover; simmer 20 mins.
- 4. Add onion. cover; simmer15 mins. more or until chicken is tender and juices run clear, stirring occasionally. Sprinkle with crumbled bacon. serve with rice.
- My mother also used boneless skinless chicken breast cut up.
