So wonderful! Cranberries add some tartness to this dish. And it's fairly chunky so you will definitely want a scoop of ice cream or a splash of cream!

Ingredients
  • 2 eggs
  • 1-1/2 cups heavy cream
  • 3/4 cup sugar
  • 1-1/2 teaspoons ground cinnamon
  • 2 teaspoons vanilla extract
  • 6 slices white bread, cut into 1 inch squares
  • 2 Granny Smith apples, peeled, cored, and cut into 1 inch chunks
  • 1/2 cup coarsely chopped dried apricots
  • 1/2 cup dried cranberries

Directions
  1. Preheat oven to 350 degrees
  2. Lightly beat eggs in large mixing bowl.
  3. Mix in the cream, sugar, cinnamon, vanilla and the melted butter using a wire whisk.
  4. Gently stir in the bread cubes, apples, apricots and cranberries.
  5. Spoon the mixture into an un-greased 8x8 inch baking pan.
  6. Bake for 45 to 50 minutes or until knife inserted into the center comes out clean.
  7. Let stand for about 20 minutes before cutting into squares.
  8. Serve with cream or ice cream.
