Most Impressive when Tuna steaks are placed over a Rice Pilaf with the Red and Yellow Salsas each flanking the sides of a basic Rice Pilaf. Roasting the peppers first (optional) does add another flavorful dimension to this dish

Ingredients
  • Red Pepper Salsa:
  • 2 large red peppers (Roasted Optional)
  • 2 tomatoes seeded and diced medium
  • 1 tablespoon fresh cilantro (chopped)
  • 4 green onions (sliced thin on the bias)
  • 1 clove garlic, minced
  • 1 jalapeño pepper (ribbed and seeded diced fine)
  • 2 tablespoons olive oil
  • Salt & fresh ground black pepper
  • Yellow Pepper Salsa:
  • 2 large yellow peppers (Roasted Optional)
  • 1 tomatoes seeded and diced medium
  • Zest & juice 1 large orange
  • 1 tablespoon honey
  • 2 green onions (sliced thin on the bias)
  • Juice of 1 lemon
  • 1 teaspoon fresh mint (chopped)
  • ½ teaspoon jalapeño pepper (ribbed and seeded diced fine)
  • 2 tablespoons olive oil
  • 4 Tuna steaks (1/2 pound each)
  • Marinade:
  • Juice of 3 limes
  • 2 cloves garlic (minced)
  • 1 teaspoon cumin
  • 4 tablespoons olive oil

Directions
  1. Combine ingredients for Red Pepper Salsa in bowl Season with salt and pepper to taste.
  2. Cover and refrigerate for a minimum of 3 hours.
  3. Place in a second bowl orange juice and honey stir until dissolved.
  4. Add remaining ingredients and combine.
  5. Cover and refrigerate minimum 3 hours Yellow Pepper Salsa
  6. Marinade Tuna for 20 minutes * Marinating for longer will tend to make your cooked Tuna steaks dry.
  7. Cook Tuna over medium to high coals until opaque, approximately 3 minutes per side.
  8. Remove from grill cover and keep warm.
  9. Heat 2 sauce pans until hot add salsas and stir until warm.
  10. Serve Tuna over Rice Pilaf with a Salsas to each side of rice on serving platter
