Spicy Seafood Linguine

- 16 Raw Large prawns, deviened and sliced in two shopping list
- red and yellow peppers, sliced shopping list
- Bunch of spring onions chopped shopping list
- 100g Sundried tomatoes shopping list
- 250g chorizo sliced into slithers shopping list
- 2 cloves of garlic, sliced shopping list
- 2 red peppers deseeded and sliced shopping list
- linguine for 4 people shopping list
- One bag of fresh rocket shopping list
- olive oil shopping list
How to make it
- Prep all the ingredients before you start
- Bring to the boil and large pan of water for the linguine
- measure out enough linguine for 4 people, add a little oilive oil to the oil. Add linguine to the water
- Use a large wok or piella pan put it over a medium heat, when warm add oil and fry off the chilli and garlic for a minute.
- Add the prawns and strir fry for 2 minutes, then remove to a plate
- Reduce the heat a little and add the chorizo, spring onions and peppers and cook for 4 mins
- Add the sundried tomatoes and cook for a further 2 mins
- Return the prawns and chilli, garlic mix to the pan, warm through.
- Check the linguine is cooked to your own taste, not too soft though. Drian and toss with a little olive oil.
- Add the linguine to the rest of the dish and mix well
- Take the pan off the heat and add the rocket, mix until the rocket wilts
- serve and enjoy
