Hummingbird Cake

- HUMMINGBIRD cake shopping list
- 3 cups all-purpose flour shopping list
- 2 cups sugar shopping list
- 1 tsp. each salt, soda, and cinnamon shopping list
- 1 and 1/2 cups oil shopping list
- 3 eggs shopping list
- 2 tsp. vanilla shopping list
- 1 (8oz.) Can crushed pineapple (undrained) shopping list
- 2 cups chopped nuts shopping list
- 2 cups chopped bananas (3 large bananas or 4 small) shopping list
- FILLING AND FROSTING: shopping list
- 1 (8oz) pkg. cream cheese shopping list
- 1 stick of butter or oleo (at room temp) shopping list
- 1 (16oz) box of powdered sugar shopping list
- 1 tsp. vanilla shopping list
How to make it
- Combine all the dry ingredients in a large mixing bowl.
- Add eggs and oil. Stir until dry ingredients are moistened-DO NOT BEAT!
- Stir in vanilla, pineapple, bananas and 1 cup nuts.
- Spread batter in 3 well greased and floured cake pans. Bake at 350* for 25 to 30 minutes or until tests done.
- FILLING AND FROSTING:
- Beat cream cheese, and butter together well.
- Add the powdered sugar and beat until light and fluffy.
- Add vanilla.
- Frost cooled cake and sprinkle with remaining nuts.
- * I usually keep mine in the refrigerator, since it has the cream cheese icing.
