Seafood Okra Gumbo Recipe
This is an easy but time consuming recipe. Well worth the effort. Great served over rice with a salad and french bread or garlic bread.

Ingredients
  • 1 can tomatoes
  • 2 cups chopped onions
  • 6 toes chopped garlic
  • 2 lbs. fresh or frozen okra cut up
  • 1/4 cup oil
  • 1 1/2 quarts water
  • 2 lbs shrimp, peeled and deveined
  • 2 lbs polish or smoked sausage
  • 1 Tsp. salt or less, to taste
  • 1/2 tsp. black pepper
  • 1/2 tsp. red pepper (cayenne)
  • 1/4 cup oil
  • 1/4 cup flour
  • Crab Meat (if you desire - add an amount to suit your taste)

Directions
  1. In a 4 quart casserole dish stir into 1/4 cup oil, the tomatoes, onions, garlic and okra.
  2. Cook covered on HIGH for 1 hour. Stir ocassionally
  3. In a 3 cup measuring cup make roux with 1/4 cup flour and 1/4 cup oil. (a roux is flour and oil browned. It is the basic for most Creole recipes. It colors and thickens gumbos, etc.)
  4. Microwave thte oil and flour on HIGH for 5 to 7 minutes. Watch that it doesn't burn. It should be caramel colored when finished.
  5. Add Roux to okra mixture along with water and seasoning. Bring to boil on HIGH and boil for 15 minutes.
  6. Stir in the shrimp, sausage, and crab meat if your using it.
  7. Cook on MEDIUM for 30 minutes.
  8. Serve hot over rice with lots of either french bread or garlic bread and a nice salad
