Pfeiffer Estate Coconut Almond Delight Tried And True Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pfeiffer Estate in Arlington, Texas in 1986.

  • 2 cups grated coconut
  • 1 cup coconut juice
  • 1 cup milk
  • 1 cup sugar
  • 3 egg yolks
  • 1 cup rum
  • 6 peeled and halved almonds
  • 3 tablespoons raisins
  • 1/2 teaspoon powdered cinnamon

Directions
  1. Boil coconut in coconut juice and sugar for 10 minutes. Add milk then stir and continue cooking for 10 minutes. Whip egg yolks with rum and add to coconut mixture. Allow them to boil for 10 minutes. Empty mixture into a glass, oven safe mold or casserole dish. Garnish with almonds and raisins. Sprinkle with cinnamon and bake at 325 for 30 minutes.
