Zucchini Fritters

- 1 lb small zucchini, coarsely grated shopping list
- salt shopping list
- 8 oz feta, or half feta/half ricotta shopping list
- 6 green onions, chopped shopping list
- 3 tbsp dill shopping list
- 2 tbsp chopped mint shopping list
- 2 tbsp chopped flat leaf parsley shopping list
- 3 eggs, lightly beaten shopping list
- 1 1/4 cups all-purpose flour shopping list
- black pepper shopping list
- oil, for frying shopping list
How to make it
- Put the grated zucchini in a colander, salt lightly, and toss to mix. Let this stand for about 30 minutes to draw out some of the moisture in the zucchini. Then squeeze the zucchini dry in some paper towels or kitchen towels and then put in a bowl
- Add the cheese, onions, dill, mint, parsley, egg, flour, and salt and pepper to taste and stir until well mixed.
- Add about 1/4 inch deep of oil to a frying pan and heat over medium-high heat.
- Drop spoonfuls of batter into the oil, but not too many at a time, you don't want to crowd the pan.
- Cook for about 2-3 minutes on each side, until nicely browned.
- Transfer to paper towels to drain. Can be eaten hot or cold.
