How to make it

  • Preheat oven to 350F. Grease non-stick loaf pan.
  • Pour water over tea leaves in medium bowl; let stand at 2 hours.
  • Strain tea, discarding leaves. Set tea aside to cool.
  • Cream 8 tablespoons butter with sugar.
  • Beat in eggs, 1 at a time.
  • Using wooden spoon, fold in flours and ground almonds, followed by raisins.
  • Add reserved tea; mix well.
  • Bake in centre of oven 1 hour.
  • Cool cake in pan set on cooling rack at least 1 hour before unmoulding.
