Ingredients
  • 1 cups boiling water
  • ¾ cup loose-leaf Earl Grey tea leaves
  • 8 tbsp unsalted butter, softened
  • 1 cup brown sugar
  • 3 large eggs
  • 1 all-purpose flour
  • ½ cup whole wheat flour
  • ½ cup ground almonds
  • 2 cups Thompson raisins

Directions
  1. Preheat oven to 350F. Grease non-stick loaf pan.
  2. Pour water over tea leaves in medium bowl; let stand at 2 hours.
  3. Strain tea, discarding leaves. Set tea aside to cool.
  4. Cream 8 tablespoons butter with sugar.
  5. Beat in eggs, 1 at a time.
  6. Using wooden spoon, fold in flours and ground almonds, followed by raisins.
  7. Add reserved tea; mix well.
  8. Bake in centre of oven 1 hour.
  9. Cool cake in pan set on cooling rack at least 1 hour before unmoulding.
