A great caramel-coated apple-flavoured cookie that's perfect for fall fairs, bake sales and school snacks! Photo is of un-coated cookies, which are equally good when slightly flattened before baking.

Ingredients
  • ¼ c. margarine
  • ¼ c. apple butter
  • 1/3 c. brown sugar
  • ½ c. sugar
  • 1 pkg. instant spiced apple drink mix
  • 2 eggs
  • 1 c. flour
  • 2/3 c whole-wheat flour
  • 1 c. rolled oats
  • ½ tsp. baking soda
  • 1 c. dried apple, chopped
  • 30 caramel squares, unwrapped
  • ¼ c. vanilla soy milk

Directions
  1. Preheat oven to 350 degrees F.
  2. In mixing bowl combine the margarine, apple butter, sugars and spiced apple mix; beat until fluffy.
  3. Add eggs and beat well.
  4. Add flour, oats and baking soda to the egg mixture. Stir in the dried apples.
  5. Roll dough into balls. Place dough on prepared cookie sheet and bake for 9 to 11 min.
  6. Cool one min. and remove to wire rack to cool completely.
  7. Combine caramel squares and soy milk in a saucepan over medium-low heat, stir until melted but do not boil.
  8. Carefully coat each cooled cookie with caramel mixture, let set on wire rack.
