Riccotti Biscotti Recipe

Ingredients

How to make it

  • In a bowl, cream together sugar, butter, eggs and vanilla.
  • Add flour, salt, baking soda and ricotta.
  • Mix well.
  • Drop by spoonsful onto cookie sheet spraye with non-stick cooking spray.
  • Bake at 350° for 15 minutes. Cool.
  • Spread with icing or sprinkle with powdered sugar when cooled.
  • Icing:
  • In a bowl, blend powdered suger, butter and vanilla. Add enough milk to make it of spreading consistency and blend well.
  • Ice biscotti.

    This looks really good and very inventive! I have some ricotta left from making lasagna and this looks like a great recipe to try.
