If you've never made biscotti before, this is the ideal recipe to try it with. It's super easy and delicious with coffee.

Ingredients
  • 2 cups sugar
  • 1/2 pound butter
  • 3 eggs
  • 2 tablespoons vanilla
  • 4 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 pound ricotta
  • Icing:
  • 1 box powdered sugar
  • 1 stick butter
  • 1 teaspoon vanilla
  • Milk

Directions
  1. In a bowl, cream together sugar, butter, eggs and vanilla.
  2. Add flour, salt, baking soda and ricotta.
  3. Mix well.
  4. Drop by spoonsful onto cookie sheet spraye with non-stick cooking spray.
  5. Bake at 350° for 15 minutes. Cool.
  6. Spread with icing or sprinkle with powdered sugar when cooled.
  7. Icing:
  8. In a bowl, blend powdered suger, butter and vanilla. Add enough milk to make it of spreading consistency and blend well.
  9. Ice biscotti.
