Meat Loaf With Prunes And Apricots Recipe

Ingredients
  • 2 pounds ground veal ( a combination of beef and pork, 1 pound each can be used)
  • 1 egg yolk
  • 1 egg
  • Salt, pepper, and oregano to taste
  • Flour and butter in wich to brown meat loaf
  • SAUCE:
  • 1/4 pound dried, pitted prunes
  • 1/4 pound dried apricots
  • 1 1/2 cups dry red wine
  • 1 1/2 teaspoons cornstarch
  • 1/2 cup beef consomé or other stock
  • Salt, pepper and parsley

Directions
  1. Combine the ground meat and the eggs and season to taste with salt, pepper, and oregano. Shape into a long oll.
  2. Sprinkle with flour and sauté in butter.
  3. Soak the prunes and the apricots in the wine for a few minutes, mash them well to a pulp with the wine.
  4. Pour fruit and wine pulp over the meat in the pan.
  5. Dissolve cornstarch in the stock an add to the meat.
  6. Sprinkle with salt, pepper and about 1/2 teaspoon of chopped parsley.
  7. Simmer until meat is done, about 1 hour or more. Add a little stock if liquid grows scant in pan.

Meat Loaf is big in my family...this is a must try! :)


We love meat loaf...and this sauce is outstanding. I think the sauce, using chicken broth would be fabulous on a pork loin as well! Thanks for sharing. :)
