How to make it

  • Combine the ground meat and the eggs and season to taste with salt, pepper, and oregano. Shape into a long oll.
  • Sprinkle with flour and sauté in butter.
  • Soak the prunes and the apricots in the wine for a few minutes, mash them well to a pulp with the wine.
  • Pour fruit and wine pulp over the meat in the pan.
  • Dissolve cornstarch in the stock an add to the meat.
  • Sprinkle with salt, pepper and about 1/2 teaspoon of chopped parsley.
  • Simmer until meat is done, about 1 hour or more. Add a little stock if liquid grows scant in pan.

    We love meat loaf...and this sauce is outstanding. I think the sauce, using chicken broth would be fabulous on a pork loin as well! Thanks for sharing. :)
