How to make it

  • Heat a non-stick skillet coated in cooking spray until very hot, add the eggs.
  • After it begins to set, crumble the goat cheese evenly over it.
  • Stop cooking when just barely set

    I have never used squash blossoms, but I would love to try this...think the neighbors will mind if I sneak into their garden after dark and pick off a few blossoms?!? I know I would love the goat cheese with the eggs - delish!
