DEBS SAUSAGE SOUP

- 1 ½ pounds sweet Italian sausage, casings removed shopping list
- 2 cloves garlic, minced shopping list
- 1 medium to 1 large onion, chopped shopping list
- 2 (16 ounce) cans whole peeled tomatoes shopping list
- 8 cups (64 ounces) beef broth shopping list
- ½ teaspoon dried basil shopping list
- ½ teaspoon dried oregano shopping list
- 2 zucchini, sliced shopping list
- 1 (16 ounce) tri color pasta shopping list
- salt and pepper to taste shopping list
How to make it
- In a large pot, cook sausage over medium heat until brown. Drain reserving some sausage fat. Put fat back in pot and cook garlic and onion for 3 to 5 minutes. Stir in tomatoes, broth, basil, oregano and sausage. At this point you can transfer to a slow cooker or finish cooking on top of stove. If using a slow cooker cook on low for 6 hours. If cooking on top of stove simmer for a couple of hours.
- Cook pasta till almost done then drain and rinse well and let cool completely. Right before you are ready to eat the soup and the cool pasta and zucchini. Let simmer for 15 to 20 minutes. When serving you can add some grated Parmesan cheese.
