Debs Sausage Soup Recipe


DEBS SAUSAGE SOUP Recipe
A hearty beef broth with sausage and pasta. This soup never last long.

Ingredients
  • 1 ½ pounds sweet Italian sausage, casings removed
  • 2 cloves garlic, minced
  • 1 medium to 1 large onion, chopped
  • 2 (16 ounce) cans whole peeled tomatoes
  • 8 cups (64 ounces) beef broth
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • 2 zucchini, sliced
  • 1 (16 ounce) tri color pasta
  • Salt and pepper to taste

Directions
  1. In a large pot, cook sausage over medium heat until brown. Drain reserving some sausage fat. Put fat back in pot and cook garlic and onion for 3 to 5 minutes. Stir in tomatoes, broth, basil, oregano and sausage. At this point you can transfer to a slow cooker or finish cooking on top of stove. If using a slow cooker cook on low for 6 hours. If cooking on top of stove simmer for a couple of hours.
  2. Cook pasta till almost done then drain and rinse well and let cool completely. Right before you are ready to eat the soup and the cool pasta and zucchini. Let simmer for 15 to 20 minutes. When serving you can add some grated Parmesan cheese.
