Raisin Or Blueberry Bran Muffins Recipe
This is an amalgamation of various bran muffin recipes I've experimented with. I frequently use blueberries over raisins and sometimes opt for fresh strawberry pieces. The bran muffin base can accommodate much from carob chips to sliced berries.

Ingredients
  • 1 1/3 c whole wheat flour
  • 1 c wheat bran
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 c brown sugar
  • 1 1/2 tsp ground cinnamon
  • 2 eggs
  • 1 1/4 c buttermilk (soy okay - I typically warm 1c vanilla soy+1 tsp margarine)
  • 1/4 c oil
  • 1/2 c raisins or blueberries, etc. (Up to 3/4 c okay).

Directions
  1. Mix flour, bran, baking powder, baking soda, brown sugar and cinnamon.
  2. In a separate bowl, combine eggs, milk and oil.
  3. Combine wet and dry ingredients.
  4. Add raisins, etc.
  5. Bake at 350 for 20-23 min.
