Ingredients
  • 1 1/2 cups black beans, dry
  • 1 1/4 cups chick peas/garbanzo beans, dry
  • 1 5/8 cups small red beans, dry
  • - (each measurement is about 1/2 package of each of the beans)
  • 1/2 cup red wine vinegar
  • 1/4 cup rice vinegar
  • 1/4 cup balsamic vinegar

Directions
  1. Prepare beans according to package directions.
  2. Put beans in a large bowl.
  3. Add red wine vinegar, balsamic vinegar and rice vinegar.
  4. Mix well.
  5. Refrigerate. Beans are high in protein and fiber. Using dry beans rather than canned reduces sodium. Serve as a side dish or eat as a light snack!

This sounds like a recipe after my own heart. I have, in fact, got a cook book called The Bean Book and use several of the recipes in it. One is very similar to yours with a few added extras. Thought you might be interested.

1/2 Teaspoon Dried Mustar1/2 Teaspoon Caster Sugar
Wine Vinegar, 6 Tablespoons Olive Oil, 2 - 3 Tablespoons Fresh Green Herbs, parsley, mint, chives, Tarragon, Fennel- whatever is available,
Sea Salt and Freshly ground `pepper
