Three Bean Salad

- 1 1/2 cups black beans, dry shopping list
- 1 1/4 cups chick peas/garbanzo beans, dry shopping list
- 1 5/8 cups small red beans, dry shopping list
- - (each measurement is about 1/2 package of each of the beans) shopping list
- 1/2 cup red wine vinegar shopping list
- 1/4 cup rice vinegar shopping list
- 1/4 cup balsamic vinegar shopping list
How to make it
- Prepare beans according to package directions.
- Put beans in a large bowl.
- Add red wine vinegar, balsamic vinegar and rice vinegar.
- Mix well.
- Refrigerate. Beans are high in protein and fiber. Using dry beans rather than canned reduces sodium. Serve as a side dish or eat as a light snack!
