Cucumber Soup

- 4 medium cucumbers shopping list
- 1/2 small onion shopping list
- 2 tbsp. chopped garlic shopping list
- 3 cups chicken broth (I use low sodium) shopping list
- 1 cup sour cream (we used non-fat) shopping list
- 3 tbsp. salt shopping list
- a dash of Tabasco sauce shopping list
How to make it
- Peel and de-seed the cucumbers.
- The food processor step should be done in two portions.
- Take the cucumber, onion, garlic, and 1.5 cups of chicken broth and blend in the food processor.
- Place in a mixing bowl.
- Wisk in sour cream, the rest of the chicken broth, salt, and tabasco.
- Place in the refrigerator for at least 2 hours to cool.
